Potato is a mostly favourite vegetable for everyone.It is a root vegetable native to the America.The vitamin C in potatoes act as an antioxitend.These substances may prevent or delay some types of cell damage according to health institutes.Also potatoes are good source of pottasium.

Potatoes are rich in fiber content and that helps in easy digestion.Mostly in beauty side,potatoes place an important role.It is used as eye mask, which helps to remove the under eye patches,cool the eyes from radiation ofelectronic devices .Potato face mask can lighten the dark spots.Grated potato along with olive oil and honey can be used as a face mask.

Along with the health benefits,fried potatoes may also come with some potential negative effects, including weight gain,especially when consumed in large amounts.It is likely unsafe to eat damaged potatoes,green potatoes and sprouts.

Apart from the all, let us see the recipe of yummy mashed potato poriyal recipe.

Course : Poriyal/ Stir Fry
Cuisine : South Indian
Recipe From : Nandhini
Serves : Approximately 5 servings

Preparation time : 5 mins
Cooking time : 10 mins
Total time needed : 15 mins

Ingredients:

* Potato – 4 medium size ( boiled and roughly mashed)

* Oil – 1 tblspn (coconut oil will be too good)

* Cumin seeds – 1 tsp

* Garlic cloves – 2 nos ( crushed)

* Turmeric powder – 1/4 tsp

* Saambhar powder – 1 tblspn

* Shallots – 10 to 15 ( Big onions also be used)

* Curry leaves – 1 string

* Red chilli – 1 (optional)

* Salt to taste

* Water to boil the potatoes

* Cilantro/ coriander leaves to garnish

* Asafoetida – 1 pinch ( optional)

Preparation Instructions:

1. Boil the potatoes and mash it roughly.

2. Mix salt and saambhar powder roughly with the mashed potato.

3. Heat oil in a kadai/frying pan,add cumin seeds,garlic cloves, asafoetida (optional) and let it splutter.

4. Add onions, curry leaves and red chilli and saute.

5. Add turmeric powder,mashed potato and fry it for a minute.

6. Ready to serve.

Steps In Pictures:

1. Boil the potatoes.

2. Mash it roughly.

3. Add salt to it.

4. Add saambhar powder and

mix it gently and keep it aside.

5. Heat oil in a kadai/frying pan.

6. Add cumin seeds,garlic cloves, asafoetida (optional) and let it splutter.

7. Add onions, curry leaves and red chilli and saute.

8.Add turmeric powder.

9. Add mashed potato and fry it for a minute.

10. Ready to serve.

Note of the dish:

1. We can boil the potatoes in pressure cooker for a whistle.

2. Adding salt and saambhar powder to the mashed potato helps us to taste it all over the dish.

3. We can add red chilli powder instead of or along with saambhar powder.

4. Finally adding shredded coconut will be too good to taste.
