Mushroom and corn are best combination for soup , which is also easy to prepare and delicious to eat. Here I am going to share my own recipe of healthy and easy version, which I do usually .

Ingredients :
* Mushroom – 5-6 nos ( You can add more)
* Sweet corn – 1/4 cup ( You can add more)
* Garlic – 4 cloves
* Coriander seeds – 1 tsp
* Cumin seeds – 1 tsp
* Dry red chilli – 1
* Butter – 1 tblspn
* Salt as needed
* Coriander leaves / Cilantro to garnish
* Pepper powder – 1/2 tblspn ( as per your spice level)
* Water – 2 cups ( or upto your need of soup)
Preparation Instructions:
1. Wash the mushrooms , corn and chop the mushrooms in to small pieces, remove kettles from corn and keep it ready.
2. In Sauce pan or a pan , heat butter and the chopped garlic and saute for a minute.
3. Add hand crushed coriander seeds and cumin seeds as well, whole dry red chilli , saute for 30 seconds.
4. Add mushrooms, corn ,salt and saute for 1- 2 minutes, mushroom will oozes out water.
5. Add water and let it boil for 5- 10 minutes or until the water get reduced by closing a lid with one spoon to avoid spilling out while boiling.
6. Add chopped coriander leaves/ cilantro and turn off the stove.
7. Transfer it to a bowl and add the pepper powder.
8. Recipe is ready to serve.

Note for the dish :
1.Wash the mushrooms using cold water only to retain the freshness and texture.
2. Adding hand crushed coriander seeds and cumin seeds instead the powder will give you the fresh flavour and aroma.
3. Add little amount of salt initially, since it is a soup, it has to boil and the water will reduce to the half and the salt level will increase, so better check and add it finally.
4. If you wish, you can add turmeric powder while sauting mushrooms.
5. You can use coconut oil instead of butter.
6. For kids, you can avoid the dry red chilli and reduce the pepper powder and serve.
